For the past several years, I've always done a big steak, shrimp and sweet potato for my birthday meal. But, when I saw that Prime packers at Costco finally got below $4/lb ($3.99), I decided to pick up this big ole 21+lb'r.
While I'm sure most people like to go out for dinner for their big day, I'm also willing to bet most Brethren are like me, you'd rather stay home and make a good meal for your family and friends. So what better way to spend the day, then smoking a brisket and making some sides and apps...
Smoked the brisket on the Assassin 24 at about 260 for 9 hours with Oak & Mesquite, then rapped in butcher paper and it finished up about 5 hours later. Usually hold in a cooler, but I recently picked up a roaster on sale at WM, so decided to hold in the roaster for the 6 hours before serving. Went a tad over on the brisket (not sure if it was the cook or hold) but overall was still very good. Still held together, just a little more done than I'd prefer. I got no complaints, just very critical of my own cooks...
Rounded out the meal with Moink Balls, Jalapeno's, Cole Slaw, Mac n Cheese, Baked Beans and Sweet Potato Casserole.
Here's a few pics from the cook...
Apps going on the Weber 26.
Apps are done.
Big ole Brisket...
Seasoned with S,P,G...
After the smoke, ready to wrap.
After the wrap. Ready to be held.
This thing was so wide, decided to cut in in have before slicing.
Brisket & Mac
Sweet Potato Casserole, Baked & Beans & Apps
Cole Slaw
My favorite "Party" plate, the cheap styrofoam 5-section plate. Probably because I tend to make too many items. Not the best pick due to me forgetting to take one before I starting eating, but all I got...
Finished the night off with a DQ log cake, not pictured.
Thanks for looking!
