I really like using beef ribs in this, they're so tender.

Gathered some ingredients..

divided the beef ribs and seasoned with olive oil, coarse salt and cracked black pepper..

Placed them in the drum to catch some smoke and color...

cut up the onions for the pot...

started the cubed tatoes, garlic and carrots in beef stock..

added the smoked ribs and let them simmer til tender...

when the ribs were tender, I added the shredded cabbage, then the summer squash, cillantro, mexican oregano, salt, pepper, and corn..

The rib meat is so tender...

I gave my bowl a quick squeeze of lime juice and a shot of hot sauce and called er good.

This is one of my favorite comfort meals. It's filling too! :-D

That looks incredible! What do you think about using oaxtail instead of ribs?
Thanks! Oxtail would be great I bet! The restaurants use a lesser cut of meat. I'm not sure what it is, but I like to use ribs. The bit of smoke really adds a lot too. :grin:

Looked just like the bowls I had when we lived in SoCal. Actually, it looks better!

Great looking meal Jeanie, been thinking of trying something different with Beef Ribs other than just seasoned and smoked, thank you for posting your cook.
 
Cowgirl - how long did you smoke the ribs before adding to cauldron of goodness? Does the fat render out before adding or is it part of the stew?
