Beef Butter on a brisket?

At the last get together in Belton, the subject of "Beef Butter" at http://localcraftbbq.com/ came up. I have been thinking about that.

What does it take to get Beef Butter on a brisket? Is it possible with a roast or some other cut as well? What defines beef fat as Beef Butter?
