Went to medium on the roast, was shooting for mid-rare but went over a bit. But broke out the jaccard beforehand. :wink: I think that may have been more veg than I've eaten in the last six months.

Well, that answers my question.
I've never been satisfied with arm roast that wasn't cooked to higher temps with a brine (https://madhunkymeats.com/product/moojus/) or injection to keep it moist.
