Ok here are a few pics of the Wild Game dinner that the Variety Club had last weekend. The Gridiron Grillers had 2 signature dishes (Crawfish Bisque and Greek Potatoes) they were responsible for plus multiple other items (Salmon, Deer meatballs, Deer meatloaf's, grilled bass, and Grouper) that got thrown at us at the last minute. The first roll of film did not come with a CD so a lot of the pics of the prep work and the grills did not make it. This roll is from the second roll. I have a third roll that shows the final product and the serving line. I hope to have that tomorrow night. Enjoy.

The last roll of film has some GREAT pics of the final hog dressed, and the serving line with over 30 different items. I will try to post tomorrow night but heck U of Memphis has a B-ball game so I may be a little busy.

The Hog getting dressed.....filled the cavity with chopped butts. This is the one time you want to be at the back of the line to get the meat under the filler.....

Ok here is the serving line.... some items did not get pictured because they were add in as filler through out the night. By the way we served over 300 people this year.

Ok from right to left you have Duck gumbo, Crawfish Bisque, and Venison Kabobs

Next from R to L you have bacon wrappd duck breasts, Green Beans, Stuffed Jalapenos, What was marked at first to be slow roasted venison but was really Vension Alfredo dish, and on the end is the Greek potatoes.

Now that what call a lot of good loking vittles. How much did you charge for a meal?


Remember this is for charity ...... $75 a head. This is the 12 or 13 year of it. Started very small and grew to up to 900 people three years ago. We had Tracey Byrd (sp?) three years ago as entertainment and a big casino in Tunica. Since then we have lost alot of corpoarte sponsorship due to the economy. Next year will be bigger and better.
