The amount of info in this thread could fill a pamphlet or book.

It sounds as though you may not have a handle on your cooker. Being able to control your cooker in all types of conditions is important.

Hiya Dixie, if you are still getting a tough or chewey rib after playing with the 3-2-1, I would guess that you need to spend more time in the clutch. Be careful though it may not be as simple as just add 45 mins to the clutch, pay attention to the texture. Adding time in the clutch may mean more time spent unwrapped "setting" that sauce to make up for the extra moisture....play around and use the 3-2-1 as a guideline not a playbook.
