my recommendation would be to start putting your boxes together 5 minutes earlier than you did. A strict timeline helps with this. that way you really have time to assess and look at the boxes before you send them. as others mentioned nix the double cuts and work on adding some moisture to the pork. Unfortunately pulled pork cools off really quickly, if it looks dry going into the box it doesn't stand a chance once it sits and waits for the judges.
