Ok on to this throwing of ye brisket (which almost came true when I put it on in...

    Oklahoma Joe Fuel Consumption

Cooked on my new Highland this weekend; seasoned it the weekend before. Was a 11 lb. CAB packer brisket. & 8 lb. pork shoulder. Probably a bit ambitious for my first offset cook. Was a hot cook 275 - 325 for bout 9 hours. Around 7.5 hours in, I had ran through my 25 pound Kingsford Hickory Log...

    Cooking Class Recommendation Request?

Wonder if anyone could recommend the best compromise of size and quality for an offset smoker. I have a new (Weber, upright, bullet) water-smoker that actually does a nice job, but now that my old CharBroil is going belly up, I DO want to replace it with a good offset smoker that won't take up...

Offset experts, coal basket or no coal basket, I gotsta know

So my offset has a coal basket / tray for holding the fuel. The bottom is expanded steel so the smaller coals drop thru, so I don't get a big coal pile. I put another piece of expanded steel on it so the holes are a bit smaller. With the coals dropping thru I have to keep a very close eye...

Water Pans in a reverse flow?

Up until recently I had been using the drip pan to keep the humidity stable in my pit but I've also noticed the pit is either too humid due to flash off or under because it simply all steamed off and dried out quickly. I've begun experimenting with adding a shelf on the left side of my pit...

    Brinkman Pitmaster Deluxe Smoker Mods

I am new to the forum and have not had any luck finding any info on Brinkman Pitmaster Deluxe mods. I am thinking of buying a used Pitmaster but want to make sure I can mod it before I do. I saw one thread about raising the fire grate and adding a baffle. Any details on these mods and any...

    Horizontal & Offset Drum Smokers

I've been thinking about building a stick burner since leaving Texas a few days ago. The Brisket from Lockhart is the new target I'm aiming for. Since all the pits I saw in Texas (and here) use indirect heat, I'm going to assume there are limits to how close one can get with a direct heat smoker...
