Such a sad tale... not sure if you all can handle it...

Oh, wait.. I joined a long time ago.. fell off the bandwagon, left.. and now, in my bbq-induced sorrow, I came back.

I am waiting on a house to be built. Correction, my kitchen with bedrooms attached, as my wife calls it. In the interim, we are stuck in a nice apartment. They do not allow smokers/grills.

Yes, you see where this is going...

I live in Bastrop. I drove aaalll the way to Round Rock because they have better quality briskets...I got my hands on a prime.

My plan was to go to the ranch and cook fajitas and then brisket the next day.. but I cooked so many fajitas, we never did the brisket and now it is sitting in my freezer begging me to smoke it and no way to smoke it.

Rain at the ranch this weekend. Wife has plans, apartment won't let me smoke it unless I sit out in the parking area for the entire time.. not near as much fun as a cabin porch etc.

So there it sits.. in my freezer.. all lonely. Then, to top it off.. someone said...no.. too hard.. someone said "cook it in a crock pot".. yea.. that almost killed me.

Okay.. back to sulking.

I am watching a live cam feed of one of the feeders at my ranch. Two Axis are walking around and all I can think of is, "if I were out there, they'd be smelling a brisket smoking".. heh

Funny how a holiday weekend gets "smoking" on the brain.

It's hibernating.....id save that brisket and bust her out as your first cook at your new place....congrats on your new house
 
Thanks. I finally can get 2 acres, a place I can have a fire pit to stand around, and a place to have all my smokers and grills.. heh

Hope you get your cooking space back soon. I'm never moving again for any reason. I've just about got my place setup perfectly.

Actually there has just been a cooking show here where one of the contestants won accolades with a brisket cooked in a pressure cooker . . . or several pressure cookers actually.

I don't think folks should get too precious, so called "barbecue" is just another way of producing delicious food.

Take a roasting pan and load it up with sliced onions and put your baby on top. Pour in some beef broth and braise it. It is not smoked, but still darn tasty.
 
All excellent ideas! I am looking around for a nice but not too expensive smoker in Austin. My wife gave me the "okay" to get one, but I don't need a huge or high end one as I have multiples usually.. heh. Would rather have a propane one for compulsive cooking, offset for the "fancy stuff" and then a frill for day to day stuff.. heh

May just pick up one of the New Braunfel ones if I can find a good deal.

Not too sure about the electric ones, albeit I am sure they are fine.

Always amazed at how expensive they get nowadays, but I calculated the cost of making one and yea.. they are pretty much in the ballpark of labor plus parts.

I love the front-door type. I have had a few of the old Smokey Mountain brand pre-landman. They never did me wrong. I still have one at the ranch.

When we moved out of the old house, I left the Smokey I had there because it was new but defective. For some odd reason, and I did not catch it when I bought it, there was no vent down by the fire box. This was a pre-landman I am sure. The heat could not be regulated at all, so when the buyer goes, "leave the smoker and we have a deal".. I was like, "uuhh.. you betcha!" lol

I also left the grill. It was time to replace it too, and since I could not keep it at the apartment.. figured.. why not.. an excuse to get a new one ;)

So.. trying to replace a grill and probably two different style smokers.

This gives me the chance to shop around. If I do not find something that stands out by Saturday, I'll to the oven thing since the brisket is thawing ;)

Now, all I have to do is find people to help eat it! lol

a Weber charcoal grill and the Old Country Over and Under would be a nice setup and not set you back too much. can't really help with the propane smoker as i have never had one. hopefully you will start posting more threads than 2 in 6 years.:laugh:
 
It is pouring right now in Bastrop... this is why I always build a deck that is covered onto my house, so I can cook in all weather. Won't have that tomorrow.. heh

Picking a dadgum smoker on a budget is a pain in the neck.

I looked up what LSG was.. omg.. I almost drooled on the keyboard.. lol My wife says I can sleep in it if I buy it.. heh.

Get a 22" WSM and don't look back, Russell.

You could cook it in the oven and borrow someones charcoal grill to get some grill/smoke flavor on it...? Just thinking out loud here for you.
