Finally...I am trying beef short ribs. Got a whole plate on sale for $5/lb(usually $9/lb here) so I was happy with that. Raining again..but no worries..the rain guard is doing its job!

Holy cow! you are really putting some time in on that Shirley! I pick mine up a week from tomorrow. The wait is killing me seeing your almost daily posts. keep em coming. I will live vicariously through you until that glorious day arrives!

Sounds exactly like my story. Sometimes life gets in the way. My original date was mid October.

Ribs probed like butta and have been pulled off the smoker! 4.5 hours...i honestly had no idea how long they were going to take...dinner is at 6 so into the cooler they go foiled and in towels.

Straight off the smoker:

I see you like the warmer. Everyone says they do 80-90% of their cooks in the warmer. Guess it's true. I've never cooked beef ribs either. Not sure why.

That is pretty quick for nice sized bones like that. At 275*, my plates usually take 5 - 6.5 hours. Did you probe between each bone? My first rack were tender between the middle bones after 5 hours, so I pulled it. The left bones were perfect, the right center bone was a little tough, and the right bone was very tough.

No not everyone

I would much rather cook in the main chamber.

I just think the food comes out better with the heat flow the RF provides rather than the heat coming up from under the food.

I dont know why that is, but I do prefer cooking that way

at 3 hours half the plate was probing like buttah.....at 4.5 hours the entire thing was probing like buttah
