I've just finished a nice, large adult beverage, but am so chill on the topic that I don't really care :p

I don't consider myself to be all that handy, so I didn't even want to bother trying to make a smoker. A WSM was a natural conclusion for me. I love my bullet so damn much. I will be getting a 22.5" in the next year or so, but right now the 18.5" is enough for me. It is such a great product and requires so little learning to use and very little tending when cooking - the MOST important aspect to any smoker I was looking at buying.

HOWEVER, there are lot of great things to be said about UDSs. I've got buds who swear by there custom-built uglies, and I've eaten a lot of great food from them. I just don't care much about building one.

Differences are minor? au contraire mon fraire....just the fact that the BP can grill, sear, you can set the upper level up to indirect and direct...plus I've set mine up to easily cook pizza with the basket even at the upper level. You can also direct cook really good with the basket on the bottom and both sliders open give so much air it's kinda like grilling from a distance. The BP can cook in so many different ways than the WSM the differences are way major imo.

Oh, come on. You can do any of these things on a WSM. You might need to use a couple of bricks or cinder blocks, but it's not like you're having to build a smoker or anything. Don't act like one is significantly better than the other. They're not.
 
I have made some tasty pizzas on the PBC. And I know people have griiled steaks on it. I believe Patio Daddio has made some great strip steaks.
 
I promised my bride and one Moderator I would never participate in this discussion again. I am biased and my humor does not translate well. That being said, I really enjoy the topic. I just wish you had waited til later in the day (when several Bretheren have partaken in adult beverages) to begin.

WSM 22 is the way to go. I have an 18 which suits our purpose just fine.
Like the Kettle, it will last almost forever.

Only thing you mention that I have not tried yet is pizza. I have a stainless steel sheet that fit my old gasser. It's bigger than my WSM. I could probably pull the water pan out, lay that sheet on top of the upper grill, and throw the lid on. Since there would be more air due to the lid not fitting, I would think the temps would get near the 500* range. Sure that would grill a pizza.

Now, I am making my WSM do things it wasn't designed to do. But then again, when they made the first steel drum, they probably didn't intend on someone cooking with it.

I think a WSM dreams of being a UDS!!!!! WOW, you must just be wanting to stir up a hornet's nest and sit back and watch the fireworks. A UDS is much more flexible and useful than a WSM.

1) Is capable of super long cooks, with very little attention required ( which is his main complaint about his WSM).

2) Is a fuel miser.

3) Can slow smoke or grill, if built to do so.

A WSM only wishes it had the capabilities of a UDS! :laugh:
 
Just ask yourself 3 questions,

How much do I want to spend?
How much time do I want to spend acquiring a cooker?
How much food do I want to cook?

With that said I love my UDS but I just built a mini WSM because 90% of the time I am just cooking for my wife, 4 year old daughter, and myself. So it all depends on budget, your time, and how much you want to cook.

I'm sure all the cookers mentioned have there pros cons cult followings etc... No matter what you decide on you will eventually want or acquire another cooker it's a sickness lol.
 
I would ask the WSM People, have you had your WSM going for 20+ hours on one load of fuel? I'm a weber fan boy through and through, 6 or 7 kettles of various sizes now (don't tell the wife). For the money I spent, the UDS is the best bang for the buck hands down.
 
One major reason I went with the UDS was because re-furbished, un-lined drums were readily available, I had all the tools, and it was just another fun weekend project for me.
But finding a drum, for most, is the most difficult part of building a UDS, I would imagine.

Yep. I don't have a 22.5", but I've had my 18.5" run for 26 hours on a full ring of hardwood briquettes, and I shut it down. It could have run longer.

I totaly agree!!! Although I have never owned a weber kettle, I have owned similar type bbq's, and i can't comment on the WSM because I have never had one of them either, but I do have a UDS. I have done several cooks on it and I am amazed at how simple the concept is and how efficient it is. I vote UDS all the way. I have no idea why anyone would want to do a 20+ hour cook but if you did, the UDS could do it. I have held 250* for over 20 hours on a basket full of charcoal. I think thats impressive.
 
Wow! I didn't realize I pulled the pin on the proverbial BBQ grenade and rolled it down the hallway! Even funnier is that 16Adams saw this one coming hours in advance. Keep the comments rolling - one thing's for sure, there's clearly no answer forthcoming!

This is tame. Still waiting for the first shot to be taken. My money is on whoever finishes their 12 pack first.:tape:
