Bite Through Skin on Thighs

Just cooked some chicken thighs that I trimmed, scraped skin and wrapped the skin around the thighs. When I ate the thigh the skin was not rubbery but also not crisp. The skin did not pull when I bit the thigh and to tell you truth I couldn't even tell there was a skin on the thigh. Is this what bite through skin means? Is the skin supposed to be crisp?

I cooked in a pan with butter under each thigh for an hour at 300. The thighs were oiled and rubbed with Bone Suckin Rub before putting in the pan. The pan was then covered with foil and cooked for another hour. After the second hour, the thighs were sauced and put directly on the grill for 30 minutes.Thighs were moist and tasty, just need to know what bite through skin is. Thanks.
 
Yep thats bite through skin it should be tender & not crispy
