Greetings ya'll. I come from a long line of men who consistently produced excellent BBQ, so I do my best to uphold the tradition. I'm always looking to learn new things and improve where I can - in addition to cooking meats and other cuts that they didn't cook back then. My current obsession is brisket. Folks in Louisiana don't do brisket quite the same as they do in Texas (I think of myself as having dual citizenship between the two states:wink:) and I love the central Texas style brisket. I have a homemade stainless barrel pit and a custom welded smoker. There are many days that both are burning at the same time. I think I might actually like the smoking and cooking more than the eating.

We don't have a lot of rules here other than spam and advertising are not permitted, the rest is just common sense, courtesy, and mutual respect for one another.

There are many members with years of experience that are willing to answer your questions and share their knowledge to guide you in the right direction. Collectively there is a wealth of experience and knowledge among the membership, including you. Don't be afraid to jump in there and share your knowledge and your experiences as well.

Thanks! People don't believe me when I tell them the best jambalaya I've ever had came from the BR area. From Gonzales to Denham it's great. Not sure why we can't make it as good over here.:sad: Gotta be the black pot!
