Started by dusting with some five spice.


Made some glaze with these.


The glaze:
3/4 cup plum sauce
1/2 cup orange juice
2 inches ginger root peeled
1 t pepper flakes
3T soy sauce
Siracha to taste
Thrown and a pot and bring to a boil, down to simmer for a while after that.

All on the Stok getting happy.


And finally plated.

Thanks for sharing the recipe! I wonder how a little oyster sauce would taste in the glaze.

BTW, how do you keep the wings from sticking to the grate?
 
Was going to do Wings like that Monday but my wife fried them before I got home :( I truly prefer the smoked crispy wing over a fried wing.

I start them out at about 200 around the center heat which allows enough grease buildup on the grate. When cooking on the Stok indirect they fill finish at about 450. I just let the heat buildup during the cook to get the skin right.
