I mentioned in another thread that we're having a big party today. I finally have enough room to cook more than a few racks of ribs. On the menu today:

Two pork butts (pulled pork)
Two chucks (PSB)
Three racks of spare ribs (cut into three strips each for riblets)
Bunch of chicken wings (smoked, then grilled to crisp up)
A few bbq'd chicken breast for some people "on a cleanse" :crazy:
BBQ'd Beans
Cole Slaw

Guests are bringing a bunch of sides.

I may do some pig candy if I have time.

Yes is it.

Ken, I got them but I may need some help from you. The probes don't go in far enough to the chamber so the temps are off a bit. I'll email you details.
 
Time to foil the beef. Onions, red & green peppers, shrooms, diced jalapeƱo, diced garlic, Guinness, roostershire, and some chicken stock. Back on the smoker.

Thanks all. Here's the smoker now. Beef in the pan, butts foiled up and riblets getting close. They're getting pretty dark, but don't think I'll wrap them. Baked beans are in the vertical and wings are going in the Weber.
