I watched the videos of your build as well. Good looking cooker. I am in the process of figuring out what options I need in a smoker I am going to have them build for me. Is there a reason you went with the conventional door and counter weight rather than the cabinet doors?
I just like the conventional door and I added the counter weight to save my back. well it has been raining on and off all day today I still did my cook but I do not have any before picture all I have are these:clap2: my pit held even temp first it was like 4 degrees between Temp Gauges but I lowered tongue and waah-laaa both Temp Gauges reading 250
Using the tongue jack helps alot. You can get even temps or make one end hotter or colder. I'll use that trick when im cooking different meats at the same time.
