Showing off my turkey I smoked today. 13ish pounds at 325 for a hair over 3hours in the wsm using kbb and pecan chips. injected last night w/a homemade serum of semi-clarified butter, apple juice and tony chachere's salt free seasoning. saved some of the injection and basted over the turkey at the 1 and 2 hour marks. a little less than 30min before pulling, I cored a couple apples and put them on the feet. I wanted them to get a kiss of smoke flavor before being cut up and put in the gravy. after pulling, bird was wrapped and placed in a cooler for the trip to my sister's house. once there it was disassembled and served. very pleased with the results. by far the best looking bird I've done yet. and the injection complimented the meat well without overpowering it. nephew said it was the best turkey he's ever had. niece said.."i like it, it's not hard". anyway, here's the pics.....
