Sliced up some eye of round roast for turning into jerky.

Recipe as follows...

4.5 pounds eye of round roast with fat trimmed off
2 quarts water
1/2 cup coarse kosher salt
1/4 cup granulated onion
1/4 cup granulated garlic
1/4 cup Tia Rita's green chili salt blend
1/4 cup coarse black pepper
1/2 cup honey
5 grams pink salt


Cured 4 days, then smoked with hickory at 130 for about 24 hours.

Turned into 1.5 pounds of jerky.

Nice lookin Jerky! Nice recipe! What did you make it in? I wanna try making jerky in my offset smoker. Haven't decided If i wanna try to hang it from the grill grates or just make it on top.
 
Something how much ya lose to water weight.

Low heat provided by my Masterbuilt electric smoker. Smoke provided by a Chargriller grill set up to burn wood chunks and ducted into the side of the Masterbuilt. The Chargriller is actually a small grill for wood or charcoal that can be used as an offset firebox on a larger Chargriller grill.
