Meat Loaf Muffins

My daughter kicked it up a notch with bacon.

Prepared her meat loaf recipe as usual.
Lined each cup of a mini muffin tin with a strip of bacon.
Pressed a ball of meat into each cup and baked to near doneness.
Then piped a generous amout of cheesy garlic mashed potatoes on top of each one and finished baking.

By the time I found out she had made them, it was too late to take pics.

One strip long enough to wrap around the side of each.
Yeah, they were very good (and I'm not much of a meat loaf eater).

It's not really literal! It's more of a jab at yapping about something that can't be described as well as photos. And these balls are huge
