I was looking for a "lesser known cut of beef" for the current throwdown. I wanted to cook a cut I had never cooked before. Decided on doing ox tail.

All rubbed up and on the WSM.

The seasonings used on the ox tails.

After a few hours in the smoke.

After around 4 hours I pulled the ox tails to begin the braise. Braised in red wine with cilantro, onions, chile powder, soy sauce, garlic cloves, oregano, salt and pepper.

Covered with foil and cooked for a few more hours till fork tender.

Sandwich made on a fresh baked bollio roll from a local panaderia, topped with a salsa fresca and cotija cheese.

I am so glad I tried out ox tail. The meat had such a rich beef flavor, the sandwich was killer. Will definetely be making again. Thanks for looking!

Looks great. The wife makes an oxtail soup that is the best beef soup I have ever had...

Killer! Oxtail is easily one of my favorite things prepared really in any way.
