Hot and fast on the big Weber.

Been wanting to try one on the big Weber just to see if I could do a decent job. On a 7AM off at 4PM, I used some cherry cutoffs from the shop and some peach chunks from a tree I cut down last year after it died. Temp ran around 325° on average.

Got it resting for a couple of hours while I drink beer to take the pain out of Iowa losing...
 
Brisket looks good, hoping ga plays better tonight than last week.
 
That bark looks amazing, Norm! Can't wait to see the smoke ring and bend test.

And at least Iowa didn't get spanked like FSU! :tsk:

That's a gorgeous color Norm. Sorry about your team. Iowa beer? I've been digging Toppling Goliath lately, Golden Nugget in particular. Been on a high quality IPA kick lately.
 
Nice looking color on that brisket! My 26.75 OTG is my go to for family cooking, we probably aversge using it 4 times a week for grilling, griddle or indirect smoking. Sure looks like it did you proud on the brisket.
 
Sorry no pictures of the aftermath, it was a tad overdone but still had good flavor. Next time I'll keep a better eye on it and less on college football!
