OK folks, there's a PBC Appreciation Cook-Off and a Special "I'd Hit that!" Throwdown. Might as well make something that will work for both! I'm calling it my PBC Fiesta!
So I love PBC chicken wings. Especially with the Tajin chili lime seasoning (YUM!). I also love reverse seared Tri-Tip....So I decided to make tacos! Yes, tacos with chicken wings and Tri-tips.....I also thought a nice tri-tip quesadilla would be good.....Its a celebration, right! OK so here we go!
Here's a few of the Tr-tip and wings getting ready for the party!
Tri-Tip and PBC Beef & Game rub....Awesome combo!
Tri-Tip all rubbed down and wings about ready to be removed from the brine
Wings with an olive oil and Tajin rub......I'm tellin you this stuff is great!!
OK, the party is getting started...Heres the Tri-Tip and Wings in the PBC getting flavorful! :becky:
Wings are done, Tri-Tip is at 115* so its its time to sear! Here's a good look at the finished wings.
And the Tri-Tip on for the sear.....I also grilled a red onion while the tip was searing!
Tri-Tip all finished! I like it Medium. I call this perfect for my tastes! :thumb:
Tacos are complete!! First the Chicken wing taco! Chicken wings with a cilantro chili lime sauce I made tomato, diced red onion! Delicious! Oh, and in case you are wondering, YES, I de-boned the wings for the taco...lol
Next up the Tri-Tip Taco.....Tri-Tip with grilled red onion a little salsa, topped with DerHuskers Pickled Red Onion (Found Here..Thanks DerHusker!!:thumb
and sliced avocado!
I didn't get a pic of the quesadilla by itself but here"s a few of the plated pics. What we have here is the Chicken wing taco, the Tri-Tip Taco, a Tri-tip, grilled onion, salsa and cheddar/jack quesadilla, 3 wings with Tajin chili lime rub topped with cilantro chili lime sauce and sliced tr-tip topped with the cilantro chili lime sauce. All garnished with cilantro, tomato, sliced red onion and sliced avocado.....THIS WAS DELICIOUS! :becky::becky::thumb::thumb:
