I've always helped someone smoke but that person has moved on so now it's kind of become my job. I'm using a large red brick smoker that'll hold 60 butts and 48 turkeys comfortably. Do a bunch of cooking for groups from 10 to 1800. I was originally looking for info on thawing pork butts but really found this site full of info that could really help me get decent at this. Next week I'm doing pulled pork and leg quarters for 100 so I'll post results.

Welocme neighbor from just down the road inbetween Gainesville & Ocala. Spent a fair number of weeks in my younger years stomping around Mud Swamp and I seem to remember a road contractor from Jacksonville having a lodge/retreat with a pit very much like you are describing
