My wife and I have friends down from Colorado. My wife asked if I'd do a picnic for pulled pork for a get together today. I graciously accepted the opportunity. I injected it last night, rubbed it down this morning, and was able to get it on the preheated smoker by 5:45, with a naked fatty for breakfast of course. I'm also taking this opportunity to test out a convection plate I made for my offset. I've been getting 40 to 50 degrees difference from side to side and I'm hoping this will remedy that. So far I'm seeing differences from 3 to 10 degrees. I think I can deal with that.

Here's the picnic rubbed and rested, ready for the smoker.

I did remove the skin. I figured it would be more appealing to the ladies of the group without the skin. They sometimes get a little squeamish about things like that.

Also, I was able to keep almost even temps across the cooker with my new convection plate. She ran within 10 degrees from side to side the whole time. Couldn't be happier.
