Hi all,

my butcher told me...:twitch:... "are you sure??!!??" when I told him the I wanted to cook it in the kettle. Here, in Italy, tri-tip is usually used for ground meat or for other preparations, not bbq or grill. So, thank you so much to my Brethren to have shown me this cut! :grin:

Rubbed with olive oil, salt and pepper, pulled 120f from indirect, then 135 from direct, rest few minutes, then cut. Some italian salsiccia on the side. A lttle pron follow:
