What Internal temp did you cook to? I have bought a couple primes from costco here in texas and it seems that the have needed to go past the standard 200-205 internal to tender up all the way.

I started probing at 195 or around there i usually dont check temp just go by feel but i thought this thing was never going to give it up it was 207 when it finely probed like butter
 
I also cooked a prime brisket from Costco this weekend. Mine was the 14 lbs variety. Crazy thing, mine also needed to get to 207 to get to the perfect point of "done". Vented then re-wrapped in paper and rested for about 1 1/2 hrs- it was money.
