Smoked some beef ribs this weekend. Threw them on the pit at 7pm the night before and smoked them to 160 at 200 degrees on my yoder (also used a smoke tube for extra smoke- four tube refills in total). From there I cranked the pit up 375 and wrapped them using the foil boat method until they probed at 195 degrees. I then rested them for a few hours before slicing. Overall they were great. Using low temps and a smoke tube seem to yield the best flavor on the yoder (and I’m sure any other pellet smoker too). I also made some burn ends out of one of the racks which were also great.
