After your post mentioned 'overnight rest', I thought it was going to be an Easter gong kind of thing. But that looks fantastic. đź‘Ť I live in sheep country and smoked or grilled lamb is way more popular than baked or used in a stew.
 
That all looks great! I've never tried pulled lamb - will have to rectify that.

Actually enjoy much more than pulled pork - a few places in Dallas I know of to get - American Butcher (at Dallas Farmers Market), Deep Cuts (Richardson) and Sara’s Market and bakery (Richardson)
