Moose - your experience with shawarma cooked on a spit vs high heat grill makes sense to me. I had never tried it before but really thought the high heat and thin cut heavily spiced chicken was integral to the flavors!

Thanks to all for the compliments and for those that have not tried shawarma, I highly recommend it!
