Greetings, Brethren!
I am plotting and planning on having a few guests Sunday, and was thinking of a Tex-Mex menu. For sure chicken fajitas on the Blackstone, and will probably splurge on a piece of flank or hanger steak. A pound or 2 of ground beef and some hard taco shells would be an easy addition as well.
My question to you, is there a recipe for pork that would be easy ( not lard fried carnitas or al pastor) to work into the rotation? I have tenderloin at my disposal, but can purchase other cuts if necessary.
All ideas are welocme!
 
Easiest would be fresh Chorizo sausage, the rope kind. Fry it up on your BS and cut it into chunks about 3-fingers wide. Other easiness is ground pork shoulder mixed with your favorite taco seasoning. I grind my own and use the big shaker bottle of spice island taco seasoning from Costco. Cheap and easy.
