I will never again use LEM casings. I am going to get some Polish sausage started today and opened a bag of LEM casings, what a piece of s*it that turned into. It was 25 lbs worth of casing so super over vacu-packed it took 40 minutes to get it unraveled enough to put 4 pieces (5 lb?) in to soak.
Starting off on the wrong foot already!!
New recipe, new procedure, new smoker gonna be a interesting day!!!

Man, I have been getting my casings from Sausage maker or Walton's, but I think my next order will be from Syracuse Casing Company. all pre tubed, soak and go it appears. Thanks for the link Thirdeye

Had great results with BnP casings also. LEM I don't buy anymore, yuck. Hear good things about Syracuse also, but never used.
