Hello! Last Saturday I got my smoker going, and since it was the first day of Fall, I decided to have one last summer inspired meal!



When I think of Summer, the first thing I think of is heat, so I made a pepper themed meal! I smoked a chuck roast on my WSM with lump charcoal and hickory chunks. I did a mustard slather for the first time and I liked how it came out. I sliced it and topped it with a homemade pepper jelly bbq sauce. The sauce was so good, it's a bright vinegary sauce with some habanero tobasco in it! For sides I did jalapeno popper mac n cheese (I sliced some peppers in half, put cream cheese on them, put them on top of the mac n cheese, and then covered the whole pan with cheddar and breadcrumbs), chipotle maple bacon baked bean stuffed pepper, and some pineapple hot dish. PHD is a recipe from Tuffy Stone's book, but I added some more ingredients... jalapeno and bourbon, yum!

I also had some ribs on the smoker that I was saving to reheat on Sunday for a fall inspired meal. I used my homemade rub plus some coffee grounds, look at the nice fall colors on this rack!

My smoker was running hot, 325, these ribs only took 2 hours to cook! I did slice a piece off at the end, the flavor was great! Then I wrapped them and put them in the fridge until Sunday

So Fall is my absolute favorite season, and I'm a huge pumpkin fan, and I'm not expecting this meal to go over well with everyone, but for the ribs I brushed them with a homemade bbq sauce that had pumpkin spiced coffee in it. I also used a little pumpkin puree, maple syrup, pumpkin spice, and lots of brown sugar. The sauce was great before I cooked it but then once I added heat to it there was a weird after taste. I was able to save it though and I only used a little bit on the ribs, the smoke and the spice from the meat definitely gave the sauce the balance that it needed. For the rest of the meal I did gingersnap sweet potato casserole, apple coleslaw, and candy corn cornbread! For the cornbread I made a batter with white cornmeal and split it into 3 bowls and added food coloring for the orange and yellow parts. The white ended up on the bottom, oops! It tastes good though, I topped it with a simple syrup I made from water and melted candy corn! Definitely unique!
