I had some food getting close to the end, and this is what I came up with. Started by chopping some brisket, and adding it to some sauted onions, jalapenos, and garlic.

Added some Green Chile.

Made a chile sauce with some guajillo peppers, ancho peppers, and beef stock. I normally would steep the peppers in hot liquid, but being last minute, I just put them in the vitamix, and blended up. Honestly, it was just as good.

Added some cumin, oregano, cocoa powder, and rotel tomatoes.

After a good simmer.

Mixed some chili in with some cream cheese and sharp cheddar.

Prepped the shrooms

Sliced some Country Pleasin sausage, and seared one side.

I would take these over an actual chili dog any day. I love fridge cleanout day!
 
very creative Josh I could knock a few of those off says the guy that only had beer to eat today
 
Nom Nom Nom! Sign me up for that anytime. Great brisket repurpose.
 
I would say that’s. New one on me but I guess it’s a new one on everyone. New, old, looks really tasty.
