The last trailered smoker I built had both a grease valve and a cleanout valve. I kept that valve open during cooks and would never consider closing it during cooks. The cleanout valve stayed closed during cooks. After cooking I'd scrape off the heavy and pressure wash the cooking chamber. All of that washing fluid and displaced solids came out the cleanout valve.

Incidentally, I used 2" quarter turn pipe valves to pass as large of chunks as possible.

I kept a pair of brand new ones for use on my next smoker but have never used them.

when i first got my LANG60 ORG. Iwould close the valve after having to get a soup size globe of grease came ploping out now I just leave it open and let it drain into a galv. bucket
