Another Fully Frozen Brisket Cook (overnight this time)

Going to give another run at a fully frozen brisket. Here's one I did a while back.

It really took about an hour to get from frozen to about a "thawed state" so on a hot and fast cook it simply added an hour. Nothing too crazy.

This go round since we are going to a friends in the afternoon and I don't want to wake up early I'm gonna easy bake oven this sucker.........I might run it on the drum for the first few hours and then just go low on the pit boss over night, but my brain already hurts thinking of this many steps :twitch:.

17lb'ish and I rinsed it under water just enough so I can trim off some of the fat on the flat. Last time when that rendered during cooking it made a blotchy part on the brisket where the rub kind of shifted off.......you all know how much of a perfectionist I am :mrgreen:

After the trim I'm going to season it and shove it right back in the freezer until tonight.

Never tried any of the Costco brand whiskeys. What are the comparable to?
