    Advice needed for startup!

Hi All, We're looking to startup a smokehouse in Edmonton, Alberta and was hoping to get some advice from the group on the following, 1. Smoker - we're still split on whether to use an offset smoker (250 or 500 gallon) or go down the pellet/electric path, is there a significant enough...

Important FAQs On Briskets and Brisket Knives

Brisket Slicing Tips Fat Trimming: It can be done before or after grilling the brisket. A large chunk of fat can ruin the taste of your delicious brisket. Trimming knives will make the work much easier. Juicier Brisket: If you want your brisket to be juicier, then you must trap the juice within...

Who “needs” a stickburner? (don’t tell my wife)

Wife asked what we should have for dinner this past week. Saw that Kroger had pork butts on sale, so I suggested pulled pork tacos as an excuse to try out the slow’n sear that I got for Christmas (Never mind that I still have some frozen pulled pork from my last cook, Shh!). Didn’t get a chance...

    Brisket on the ASmoke AS300

It is hard to believe that this is only the second brisket that I have cooked in 2020! My wife has been wanting brisket and she found this choice packer at Walmart that looked good, so I trimmed it and tossed it on the Asmoke pellet smoker. It came out very good, especially for a choice brisket!

    Need some brisket advice

Merry Christmas all. I need to be schooled on brisket. I cooked a prime the other day at 275 until the bark was nicely formed. Wrapped in foil until it was probe tender on several sections of the flat. Temps were between 203 and 208. The point was like warm butter. vented and rested for...

Brisket - Marinate/Season the night before?

Like a lot of us, we are looking to fine tune our briskets. It actually has my wife out of her skull at times. So the question is, what effects would marinating and seasoning a brisket the night before? We are not wanting to do it for flavor. It is more about getting up and getting going...

    Brisket Nachos

This past Saturday, I smoked a brisket flat to make some nachos. While I wasn't 100% pleased with the way the brisket turned out, it was flavorful, juicy, and the nachos were great.

Selling my 1st Brisket & Pork Butt

Looking back to “helping” my dad make his UDS (ugly drum smoker) I have ALWAYS loved barbecue. I was never into helping him with the hard part, but I always loved helping him not waste any of the delicious brisket/pork/chicken/turkey/etc that he smoked. During this quarantine, I decided it...

Hope everyone had a fun Independence Day

Hope everyone had a safe and fun 4th of July! We had a blast with friends, family and neighbors as I catered our festivities with brisket, ribs, and hotdog burnt ends. My neighbor even got out his M35 Deuce and a Half and was giving everyone rides in it around the neighborhood. Was able to get...

Good morning Brethren! First time poster. I planned on cooking a big packer on my PBC for Father's Day and when I invited my dad he said he had a brisket he could give me. He brought it over and it was only a 6lb flat so I bought a 14lb packer to go with it it because my wife's family is also...

    Cooking Brisket in a Restaurant.

Hello, I have been doing research on opening my own BBQ joint and I have a specific question about cooking. I want to do Kraft BBQ where you can smell the smoke and cooking from down the street. What are some of the best processes for cooking brisket where you don’t have to be up all night or...

    Brisket and Foil

Hey brethern! I was watching some YouTube videos on some of the big time Pitmasters down in Texas. I noticed that they had the edge portions of some of the brisket covered in foil, with the rest of the brisket still unwrapped. I figured this was done in order to keep some of the edge briskets...

    My First Brisket

I've been smoking and grilling a long time but have never tackled a brisket. Are Sam's briskets good? Where else is a good source? I'm smoking on a Treager Pro Series 36. Would love tips and tricks for a delicious fall apart tender brisket. Thanks, Papa Smokin!

High Plains Brisket Shenanigans w/ Pr0n!

Well, here goes nothing. It's been over a year since I last tried a whole packer brisket. I did some freezer clean-out, and found a 17lb monster from the last $1.77/lb sale at Albertsons back in 2018. It defrosted in the garage fridge for a few days, and today's the day of reckoning. I...

    Rubber Brisket (Bow Bow Bow)

So I’ve been cooking Wagyu briskets this year for comps and am still struggling to get to the magic tenderness point. I do think I am undercooking but the question about that is when I probe it feels like no resistance in the flat, the flat has a slight jiggle, and I’m only holding 2hrs max (I...

    Blackstone Wagyu briskets?

Hi there, Does anyone know anything about these, or where do they come from? We have tons of these floating around here in Europe and there is no information whatsoever anywhere about the producer! They seem to be pretty good actually. The slaughter & processing plants are in Colorado, so I...
