I just bought a nice offset, reverse flow stick burner. My neighbor had a large (20") limb fall out of a red/black oak and it has been lay there for roughly one year. I cut it up, split it, and removes all of the bark. Most of it was not touching the ground. In some places there was a very small bit of spalting starting in the sap wood on some places so I tried to remove that also. The heart wood looked great. Will this still make good smoke after it is properly seasoned? Thanks for help in advance.

It's already on it's way to being seasoned. Now that it is split it will finish seasoning very quickly
Most likely there was no need to remove the bark or the spalt. There is rarely a reason to remove either.
