Is the ash pan welded to the basket? How will you dump the ashes if you still have charcoal in the basket? I prefer that the basket and the ash pan be separate pieces.

Sorry, forgot all traditional UDS's have to attach the two somehow since you can only access them from the top.

Smoked a fatty last night - stuffed with green chile and sharp cheddar - bacon weave wrap:

Fatty went along nicely with the Biscuits and Gravy I made this morning:

Also smoked some pork neck for my Gnarly Beans recipe - (couldn't find ham hocks):

Smoker is cooking nicely today:
