It's really hard for me to take photos while cooking on Thanksgiving. But I did manage to get a few. I've been using the Southern Pride for a number of years, mainly due to the consistency in timing. If you don't add wood, the SP is just a large convection oven, which can be handy for additional space. However, if you set the cook temp to 140 degrees and keep feeding it lump and wood, the gas assist does not kick in unless you forget to feed it. While the smoke flavor is front and center, I would prefer a little darker color. We cooked three turkeys, two smoked and one roasted in the oven, to provide plenty of left over bird. Turkey #3 was a complete disaster and will get a thread of it's own. Turkeys 1 & 2 were exactly what we were expecting.
We had 15 people, most brought something, and my daughter really stepped up and coordinated the kitchen. Since she manages the prep work at a Chipotle location, I felt comfortable stepping back and letting her handle things inside.
For Christmas, my plan is to operate the smoker at a lower temp, and hopefully more time in the smoke will help with color.
