So I started off by seasoning some thighs with "Simply Marvelous Sweet and Spicy"

Next I did a freezer dive and found some sausage

And finally out of the freezer some hot italian for a little meatloaf with some spice added

Nice mash-up Marty!

Stopped using the WSM water pan after the first couple cooks. However, those pics looking into the WSM scared me seeing the 2nd level grate not installed. The tabs for the top level grate on mine are suspect...too short. If not very careful flipping meat or spatchcocked birds, the grate comes off two of the tabs easily and tilts. Would have lost 3 racks of ribs to the fire below if not for the 2nd level rack a few years ago.
