Stuffed chicken

In keeping with my new heart healthy regimen I picked up a fresh deboned chicken. Never stirred one before so I decided to keep it simple. Rubbed with wild mushroom and sage infused Oliver oil, seasoned and laid out spinich and feta cheese. Not the prettiest truss job but the bird won’t fly away! Going on the grill at 275 with a couple of chunks of cherry.

Lost 30 pounds in 5 months. We only eat chicken, turkey, salmon, red snapper, speckled trout, grouper, any other fish I get my hands on, shrimp, lump crabmeat, lots of vegetables and a filet once a month. Not much suffering here.

Hour and a half at 275. Can out juicy and tender. This is a keeper.
