Stay at Home Gumbo and Cassoulet

I had some leftover pulled pork from my cook the previous weekend so I decided to utilize some of it. Instead of using sausage in the gumbo and cassoulet I used the pork and also chicken thighs. Roux had a nice chocolate color after an hour. Made a country loaf as well.
