Smoked salmon

You can substitute dark brown sugar for the Rapadura and lemon juice for the whey. Damn good.

Been using a recipe for gravlax/gravlox from the book Nourishing Traditions for years. Takes a few days, but some of the best salmon.

Never had a setup suitable for cold smoking and only enjoy store bought.

I LOVE gravlax and only make it in the winter. The cure time is well worth the results. I have to wait for cold temps in the winter to cold smoke. I use a pellet maze to generate the smoke on my BGE with the plate setter to deflect. No more than an hour in the smoke and it's good to go. :-D
