just dropped some wet aged prime shortribs

dropping a choice packer tonite and breaking out my biggun in the morning to load the rest

coworkers asked if i was firing up the smoker this weekend and if i could find some room for their easter protein. they all offered me bottles of single malt scotch and kraft beers as payment so i could hardly say no

will update with pics over the next 24 hours as needed

You Texas guys get all the good beef ribs, not these meatless
garbage in the stores out east.

find a butcher, not a retailer, that sells prime grade rib roasts or prime bone in rib roasts. tell him to give you the rack of ribs they were attached to or in the case of the bone in, have him cut you off the rack of bones. these are about 2"-3" thick, depending on where you measure.
 
this might be my most perfectly cooked piece of meat to date. scotch glass for rib size reference, oh, and also for my scotch!
