Porter Road time again!

My FIL and my MIL send us cooking stuff for Christmas. The last two years it's been boxes of meat from Porter Road. This year it is a custom box with a beef belly, beef cheeks, pork rib tips, pork jowl and pork wings.

This should be quite the adventure. None of these are meats I have cooked before (though the rib tips shouldn't be a challenge.)


Time to look for recipes (gonna make beef bacon, probably.)
 
The Hog Jowl...pull the hyde (skin off) and slice it. Then deep fry it and it is like bacon...so good. We cook it every year for our New Years Meal.
 
How about cure the beef belly for corned beef and then smoke like a pastrami

Should be great anyway you choose to prepare
