Any of yall recreate Pollo Loco or Pollo Regio at Home? I've tried a cpl times following Youtube video recipes - was Good but Not as Good as Pollo Regio......

I like white,juicy chicken as my grandson calls it. Split chicken breasts smoked on the WSM or Kettle.Once they are done,you can make em your own.I like them just the way they are when they come off the grill.I like=adding other flavors after the original cook too,to change things up a bit.
 
I have been working on Pollo Assado for a while and haven't been able to quite get it right either. It's always yummy but not quite what I'm going for.

A few things I have tried with good results.

Injecting and marinating - injection is the spice mixture and salt with 4T of melted butter

Small chickens, around 2.5lbs if you can find them

Orange juice concentrate over fresh squeezed seems to get better flavor

MSG is good stuff
