For every 2 cups of rice:

Cook 2 cups of rice the night before.
Spread rice on jelly roll pan and refrigerate uncovered.
Chill overnight.

Take the rice out an hour before making the fried rice.

Proteins:
1/2 lb protein(s)
1 t vegetable oil
1 t soy sauce (i use low sodium)
1 t cornstarch
1 pinch baking soda
1 pinch MSG (optional)

Cut protein into small pieces. Mix all ingredients together and let sit 30 min.


Egg
2 eggs
1 T oil

Beat eggs. Heat oil. Scramble eggs - set aside

Vegetables
1/4 C Onion-white diced
2 Spring Onion (aka scallions or green onions) Cut longways and then into 2.5" pieces
1/4 C Frozen Peas
1 bag of frozen stir-fry vegetables

Seasoning
1 T Dark Soy Sauce (must be dark - it's different than regular soy sauce)
1 T Light Soy Sauce
1 T Ground ginger
1 T Garlic - minced
1 T Ground Lemongrass (optional)
Salt & Pepper to taste

Stir together and set aside

Add-ons
1/4 C Cashews
1/4 C Spring Onion slices (green part only)

Procedure:
Saute Protein - some cook longer than others
Chicken takes longer than pork, then beef, then tofu, then shrimp (use one or all)
Add vegetables and stir-fry.
When protein is cooked, add rice.
Stir-fry for 2 minutes.
Add cashews and seasoning.
Stir-fry additional 3 minutes.

Put in a large bowl and sprinkle with spring onion slices.
