Leftover bbq’d Easter ham sliced thin, deli turkey, Tillamook baby swiss.

Triple stacked on thick cut brioche, cut on a diagonal, slightly squished the bread then wrapped each half tightly in saran. Into the fridge for several hours to overnight.

I mixed the batter (Trader Joe’s Pancake and All Purpose baking mix) while I heated oil to about 325 in a no. 7 Griswold Tite-Top Dutch oven.

Unwrap, dredge in batter and fry for about 2 minutes, flip, and fry for 2 more minutes. I ate mine with sweet chili sauce and stone ground mustard on the side.

They were excellent, my son said it tasted like the state fair!

pancake batter...interesting...i do love a good monte cristo...the place i used to get them here lost their minds...went from a legit sandwich to this...thing....raspberry filled donuts for the "bread"...very strange

I have usually made them by dredging the sandwich through an egg/milk wash then shallow fry in butter and oil. It’s a more savory sandwich and my preference.

It was my first time using a pancake mix and deep fry, I was slightly skeptical and expected it to be too sweet for my tastes, but it was not. The batter was not overly sweet and the baby swiss cheese and salty ham balanced well. My family really liked them.

I’ve had the Monte Cristo sandwiches served with powdered sugar sprinkled on top and jam/preserves on the side and I don’t enjoy them nearly as much.
