It was cool and rainy all day here. What a great day to make some sausage. Maple-Brown Sugar Links and Jalapeño-Cheddar Sausage. Thanks to the Brethren JMD46 and AussieTitch for their recommendation I couldn't get this out of my head.

This is only the third time I have made sausage. The flavors from the test patties were awesome, but my skills at making individual links are nonexistent. I managed to get about 1/3 of the Maple Brown Sugar into links before I threw in the towel to finish up with large coils.

Any help or suggestions is greatly appreciated.

I plan to smoke/grill the Jalapeño Cheddar tomorrow and I will post some pROn.

Don't overthink the links, make them after you have stuffed the skin.

there is literally hundreds of methods on YouTube.
I still make full sausage like you have, makes great party food.
Well done on doing it mate

That looks damn good... The easiest way for me to do links is to twist one... Pinch the second at the length then twist the third at length... Two or three twists are plenty for natural casings... Easy, peasy!!! If I can do it... Any drunk monkey with a hangnail can do it!
