We're a family of pasta lovers, but we also want to keep the carbs as low as possible, so we were happy to hear about the Carba-nada pasta from Al Dente Pasta Company.

We also love carbonara so...

We don't use prosciutto we prefer thick cut bacon.

Get the pasta boiling and the eggs prepared. Again, we don't just use the yolk, we like the whole egg.

Always save some pasta water if you like your dishes creamy.

Add pasta water to help with the creaminess and add your cheese. Get the pasta nice and hot in the frying pan, then turn off the heat and add the beaten eggs and toss about to cook the eggs.

Add more parmesan or asiago cheese and serve.

The lo-carb pasta's I've had have a little tougher texture, and a bit more of a buckwheat-ish flavor. YMMV
I still only eat the stuff once in a while as a treat
